We've been making stew since we were first married. It's an inexpensive and healthy meal. Now that we're on a modified paleo diet, I've adjusted our typical beef stew recipe to fit our new eating plan.
This is what I have cooking in the crockpot right now. Hope you enjoy it.
Ingredients
- 2 lbs lean stew meat*
- 1 sliced onion
- seasoning to taste
- 2 T beef bouillon
- 2 C baby carrots
- 1 C sliced celery with leaves
- 1 C chopped broccoli
- 1 C chopped cauliflower
- 1 C beef broth
- 2 C water
Instructions
- Layer all ingredients, in the order listed, in a crockpot
- Turn to low. Cook 8–10 hours.
Notes
Sometimes stew meat is unusually expensive, due to the labor involved. Compare beef prices. If you'd like to save a few dollars, pretty much any cut of beef will do. Buy the least expensive and cut it up yourself. The crockpot will tenderize most any cheap cut, due to the long, slow cooking process.
