Chicken alfredo is divine. OK, admit it. Anything covered with alfredo sauce is divine. But traditional alfredo sauce is a conglomeration of butter and cream and cheese—an assortment sure to land squarely on your thighs.

This version of chicken alfredo delicious and healthy…and much less likely to squeeze you our of your jeans. Try it!

Healthy Chicken Alfredo

Ingredients

  • 1-1/2 C light tofu
  • 1-1/2 C fat free cottage cheese
  • 1/2 C fat free cream cheese
  • 1/2 t garlic powder
  • 2 T minced onion
  • 1/3 C parmesan cheese
  • 1/4 C romano cheese
  • 3 T light butter spread
  • salt & pepper to taste
  • 4 C diced, cooked chicken breast
  • 1 lb whole wheat fettucini, cooked

Instructions

  1. Place all ingredients except chicken and fettucini in a Vitamix blender, in the order listed. Secure lid.
  2. Select variable speed 1. Turn machine on and quickly increase speed to variable speed 10, then to high.
  3. Blend 3–4 minutes until smooth and hot.
  4. Stir in chicken.
  5. Serve over cooked pasta.
