Tenderloin is healthy and tasty. This super-simple recipe is astoundingly tasty. The rub is very flavorful and adds kick, but is mild enough that my young kids love it. I'm a baby about spicy stuff, but it's one of my favorite meals.

Adobo-Rubbed Pork Tenderloin

Ingredients

  • 48 oz pork tenderloin, trimmed and cut into 3–4 ounce pieces
  • 6 T paprika
  • 2 T pepper
  • 2 T salt
  • 1 T chili powder

Instructions

  1. Heat oven to 350°.
  2. Mix spices. Thoroughly rub both sides of each piece.
  3. Pan sear each piece.
  4. Transfer pan to oven and bake until done (6–8 minutes per side).
